3787 took my 1.089 OG Tripel down to 1.008 in about 2 weeks, possibly less as I waited for awhile to take a hydrometer reading. Looks to be over 10% and holy hot alcohol flavors! It's going to take awhile to mellow out but it will be good & dry!
 
I kept it around 64 for the first 3 or 4 days then let it rise to 70ish to finish out. The hot alcohol is just a by product of a big beer that's only a couple weeks old. I'm gonna move it to a secondary and let it bulk age for a bit. It'll mellow out.
 
At those temps you should be good. You are right, just let it age and it willl be a good brew.
