Quick question: Roughly how long does the AHS Oktoberfest kit take to ferment? I maybe picking up a mini-fridge soon for lagering soon, and I'm wondering how long it'll take to start celebreating Oktoberfest. :)
 
Well, the 'oktoberfest' is brewed in March, and lagered until the festival. It would be drinkable in October if you brewed it tomorrow, assuming that kit comes with a real lager yeast and not a clean ale yeast.
 
You need to pitch a huge amount of lager yeast. Check the mrmalty calculator. I'd guess 2-3 weeks fermenting at 50F Then lager for a month or more in the mid 30's. So 2 months roughly. More would not hurt but you could get r done in 2 months minimum.

But make sure you pitch the proper amount of yeast and start it at 50F. Otherwise the ferment will be much longer and you probably will need a diacytle rest.
