Quick question: Roughly how long does the AHS Oktoberfest kit take to ferment? I maybe picking up a mini-fridge soon for lagering soon, and I'm wondering how long it'll take to start celebreating Oktoberfest.

Well, the 'oktoberfest' is brewed in March, and lagered until the festival. It would be drinkable in October if you brewed it tomorrow, assuming that kit comes with a real lager yeast and not a clean ale yeast.

You need to pitch a huge amount of lager yeast. Check the mrmalty calculator. I'd guess 2-3 weeks fermenting at 50F Then lager for a month or more in the mid 30's. So 2 months roughly. More would not hurt but you could get r done in 2 months minimum.
But make sure you pitch the proper amount of yeast and start it at 50F. Otherwise the ferment will be much longer and you probably will need a diacytle rest.
