I'm busy making an all grain tripel using 80% pilsner malt, 10% amber, 10% inverted cane sugar.
I wanted to experiment with using two yeast strains and added a packet of dry s-33 and t-58 to the primary. I didn't make a starter for them but just pitched them dry.
The OG was 1.065 and after a week the primary is still high at around 1.025. Thats way too sweet. The thing I did notice is that I'm fermenting in a plastic (PET) carboy and the temperature is around 15 C (59 F).
Is this temp too low to ferment with?
