After having a cream ale last night (Shenks (sp) Cream Ale, Highland Brewing), which was a homebrew contest winner, I want to make my own.

The bottle said the malt was 2-row and Roasted barley. I was thinking probably light or amber extracts, or possibly a dark with a light.

Totally clueless on the hops situation. What are some of your suggestions?

Cream ales tend to be very light, so I wouldn't use any dark malts. I use corn in mine, but that must be mashed so it wouldn't work for an extract beer. You can buy rice syrup to lighten up the body, though.

I like noble hops for bittering- maybe hallertau. I think saaz hops give a spicy yet understated flavor in the finishing hops.

You could check out my cream ale recipe for hopping ideas, and I'll see if I can find a way to convert it to extract.

Another option is to download a trial copy of BeerSmith. Then, find a recipe you like and input it into BeerSmith then convert that all grain recipe to an extract version.

But I like the idea of getting a kit from Northern Brewery. When in doubt, I always go to a well trusted source.

I have a two week old AHS kit cream ale sitting here. It's going in the keg next weekend, and I might start drinking on it the next weekend.

Ask me then how it tastes.

:)
