So my wife love Wells banana bread beer. I don't necessarily need it to be exactly like it, but I would like it kind of close. As long as I taste like bananas, it would be a good start.

I was also thinking I adding roasted bananas to my mash as well.

It's probably gonna be a lot of bananas. Probably 3 or 4 pounds in the mash.( which I will roast at 350degrees until they are soft) then I will freeze 3 or 4 pounds and put them in the bottom of the secondary when I transfer. The yeast in gonna use is supposed to give off some banana aromas. I think it may turn out pretty tasty. Oh and I'm gonna ferment at the least, 70 degrees.
 
Search Banana Foster Cream Ale. The guy used 5lbs of banana in the secondary for 3 weeks. Food for thought.
 
Wow! That guy made a strong one. I think I'm trying to keep mine around 5-6%. I didn't even think about the bananas adding alc. content. Duh..... Also I might have to add some vanilla to it. That's sounds like a great idea.

Any thoughts on throwing a banana to the last 10 minutes of the boil?
