Never done a Mexican style myself, but I found a few on the Web. Of course, you can always brew a pale ale and stick a lime in it, if all else fails. Good luck.

1697 Mexican Cerveza - A gentle, delicate light lager subtly flavoured, refreshing to the full. Typical analyses when canned: Colour (EBC Units) 8 - 12. Bitterness (EBU's) 45 - 55. Solids (by refractometer) 80% - 82%. Acidity (as lactic) 1% max. pH 5 - 6. Free Amino Nitrogen 0.15%.

Charlie Papazian has an AG recipe for Corona in one of his books. I brewed it AG, using corn. We tasted it out of the primary and I think its right on.

I don't think you can do a Corona as an extract beer because I don't think the extracts will go that light and dry. I might be wrong. I sure wouldn't brew it with corn sugar.
