I recently tasted NB's 'Mighty Arrow' pale ale and really liked it. for those who haven't had it, the hoppyness is very earthy with some citrusy notes also. not overly bitter at all, the flavor/aroma are more present than the bitterness, which is more to my liking with a pale ale. nice, subtle, malty sweetness is also present.

i'm trying put together a recipe that will appoximate what they've done, not to clone necessarily, but to get something with similar hoppiness and maltiness. i know from reading around and on the bottle that some honey malt is used and for hops, cascade and goldings are used... possibly with amarillo for bittering, but i can't find consistent evidence of that.

anyway, here's what i've put together, if anyone has any advice on modifications or any suggestions at all on amounts, types, etc of ingredients, i would greatly appreciate it.

7# Pale (2-row) Malt
2# Honey Malt
2# Vienna Malt

.75 oz. Amarillo @ 60
.25 oz. Cascade @ 60
.50 oz. Goldings @ 30
.25 oz. Goldings @ 15
.25 oz. Goldings @ 5
.25 oz. Cascade @ 5
.50 oz. Cascade - Dry Hop for 3 days

are the vienna and/or honey malt too much? i don't want it overly sweet, and fear this might be a tad too much.

with the hop schedule, i really don't have much idea where hops will bring me other than what beersmith tells me (IBU ~ 38). but if some of you experienced hopheads can tell me if i'll get a good combo of earthy/citrusy with this mix, i'd appreciate it.

thanks! :mug:

I read on their site that they use Cascade and Amarillo for hops. Here's what I came up with for my attempt:

4.00 lb Pale Liquid Extract (8.0 SRM) Extract 40.00 %
2.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 20.00 %
2.00 lb Vienna Malt (3.5 SRM) Grain 20.00 %
1.00 lb Honey Malt (25.0 SRM) Grain 10.00 %
0.50 lb Barley, Flaked (1.7 SRM) Grain 5.00 %
0.50 lb Caramel/Crystal Malt - 80L (80.0 SRM) Grain 5.00 %

0.50 oz Amarillo Gold [8.50 %] (60 min) Hops 15.5 IBU
1.00 oz Cascade [5.50 %] (30 min) Hops 15.4 IBU
0.50 oz Cascade [5.50 %] (15 min) Hops 5.0 IBU
0.50 oz Amarillo Gold [8.50 %] (10 min) Hops 5.6 IBU
0.50 oz Cascade [5.50 %] (5 min) Hops 2.0 IBU
1.00 oz Amarillo Gold [8.50 %] (Dry Hop 7 days)

A few more IBU's than you have, though I'll probably play with the hop schedule a little more. Mine is a PM.

I read on their site that they use Cascade and Amarillo for hops.

i saw that also, but on the bottle i drank last night it says made with cascade and goldings hops. no mention of amarillo, although i think that would be fine for bittering... amarillo and cascade are similar, no?

correction: the bottle does say amarillo/cascade 'sniffs' and the actual six pack says goldings/cascade... odd.

can anyone chime in on the portion of vienna and honey malt? will 2# of each make it too sweet n' malty?

The one bit of advice I got when I posted my recipe was someone suggesting I cut my honey malt from 1# to .5# but I decided to keep it where it is.

I am a huge Mighty Arrow fan and was going to make a batch with Amarillo and Cascade hops myself after reading that on bottle. My first batch was an Amarillo Ale and I loved it. Just curious, is this recipe for a 10 gallon batch? I only have the equipment for 5 gallons.

bumping this thread, because i finally did something about it...

brewed this about a month ago, after fermentation and dry hopping, i finally kegged it tonight and the hydro sample tasted pretty damn good, i look forward to it in a week or two. here's the recipe i used... i honestly don't even remember what mighty arrow tastes like since i haven't had one since may or june... i'll update this when i'm able to taste it all carbed up.

here's the recipe i came up with:

OG: 1.052
FG: 1.009
Wyeast 1056 (american ale) @ 62 for 14 days
IBU: 37
Mashed 152 for 60 min

5.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 44.44 %
5.00 lb Pale Malt, Maris Otter (3.0 SRM) Grain 44.44 %
0.75 lb Biscuit Malt (23.0 SRM) Grain 6.67 %
0.50 lb Honey Malt (25.0 SRM) Grain 4.44 %

60 min:
22.00 gm Magnum [12.10 %]

10 min:
14.17 gm Cascade [5.50 %]
14.17 gm Amarillo Gold [8.50 %]
7.09 gm Goldings, East Kent [5.00 %]

0 min:
14.17 gm Goldings, East Kent [5.00 %]
14.17 gm Amarillo Gold [8.50 %]

Dry Hop (10 days):
14.17 gm Amarillo Gold [8.50 %]
7.09 gm Goldings, East Kent [5.00 %]

Just fyi... the recipe I did is in my database as Kabe's Secret. It's the one that took second in the HBT comp. I thought it came out pretty good compared to Mighty Arrow. Can't see how close it is in taste since I didn't taste them together, but it's damned good.

nice, sounds like a goodun... perhaps once i get this kegged up, i can bottle a few and we can do a little swap-a-roo? that is if you have any left.
