I recently got a Beko undercounter fridge for a kegerator build.
The fridge is very light, and the walls seem hollow. I was just wondering is it possible that beko used a vacuum, or some gas as insulation, meaning, if I drilled into it, it'd destroy it?

Very unlikely due to cost of manufacturing and efficiency. Probably just expanding foam in the wall cavities (the industry standard).
None the less...beware of hitting any tubes carrying refrigerant.
A very shallow hole in the skin and a probe before using a hole saw will save a lot of heartburn and heart ache.
