Using Coopers as LME + with AG brewing

I have been AG brewing for a bit and my beers are turning out awesome.

For Christmas I was given a few coopers kits ( Stout, Canadian Blonde and Dark Ale) I'm pretty sure Coopers Kits are LME with Hops added but I have never used one.

I know that the kit requests 2lbs of sugar added and that some people use the equal amount of DME. I don't want to go buy DME when I have 75lbs of 2row sitting here.

So what if I mini mashed 4lbs of 2row and added 1/2 oz of fuggles for the stout?

What about 6 lbs of 2row and multiple hop additions for the blond?

The yeast is only 7 grams. Should I double pitch in one and use notty for the other?

What do you think? Am I close?
