Hi all,

I have a fair amount of cider that has been in a secondary for a while and would like to force carb and back sweeten some of it. What is the ratio of kmeta (or campden) and sorbate per gallon? I'm doing one five gallon keg and will leave the rest until summer.

Thanks

I've never had luck with stopping fermentation, but once it stops I do fine with some sorbate and campden tablets. I use one campden tablet per gallon, and 1/2 teaspoon of sorbate per gallon. I'm not sure how much powdered k-meta that would be, but it's not much! Maybe 1/4 teaspoon or so for 5 gallons? (Double check that- that's going from my middle aged memory!)
