hey all,
so i have been reading this forum for a long time now and finally made an account the other day. i never actually had to post any questions because so many of them have been asked and answered already. so first off, thanks for that, second let me know what you think of this recipe. any and all criticism is welcome.

6.6 lbs of wheat malt extract
3.3 lbs of amber ale extract
1/2 lb. Crystal Malt
1/2 lb. Wheat Malt
1/2 lb. Torrefied Wheat or something comparable
3/4 oz coriander seed
1/2 lb. dark belgian candies
1 oz. Saaz Hops (flavoring)
1/2 oz. Kent Golding Hops (bittering)
1/4 oz. Cascade (dry hop)
Belgian White Ale Yeast
3/4 cup corn sugar
4 lbs apricots
1 lb pear

i am going for something in the higher abv range, still i am not sure if that is to much malt extract? if not, what do you think about using 3.3 wheat malt and 3.3 pale ale so a 1:1:1 ratio of wheat, pale, and amber? i have never used torrefied wheat or coriander seed, so i am guessing on amounts. i want the fruit flavor there but just subtly, should i increase amount bc of abv?

Side question - what is refermenting?

lets rip this apart, put it back together and make some awesome beer. THANKS!
