Just cracked open my first bottle of my first batch of brew (Cassy Pale Ale) today. We made a pale ale. I don't have the most discerning pallet but I swear this could be some Mirror Pond or the like.

We used
7lbs Light Malt Extract
.5 lb Crystal Malt 40L
1lb of Amber Hugh Baird (not sure on actual name, just reading of the receipt)
2oz of Centennial hops for about 40 mins followed by
2oz of Horizon hops for 20 mins then
2oz Perle hops for 20 mins and finishing with
2oz Amarillo hops.

Primary fermenter for about 9/10 days
secondary for about 7
and it was bottled 10 days ago.
we plan on not opening anymore for another week at least.

I was extremely nervous tasting this first one and am extremely happy with the results.

We have a batch of Porter 5 days into primary fermentation right now.

I was nervous too when i cracked open my first homebrew. I read somewhere that you can taste the beer the same day you bottle it. I did and it was disgusting so I got really worried I wasted all that beer. Plus i had out-of-town guests coming the day i was going to try it and they were all excited about trying it too. Thank god I opened it and it actually taste like beer. Pretty good beer too, considering it was my first time.
