Addition of fruit/fruit extracts to recipes (ad hoc)

Trying to get feedback from people that have experienced adding a little flavor to standard extract recipes. I have always liked the favor profiles of a Cherry Wheat or Citrus favored beer. Is is possible to add fruit to the extracyt brewing process?
 
I have added fruit extract to the bottling bucket just before bottling, taste and add more if needed. If using real fruit rack to a secondary on the fruit and let it sit on the fruit for a week and sample it. I haven't used cherries but I would start with 1-2# per gallon. Some of the fruit extract has added a bit of a fake/medicinal flavor, hard to explain that taste.
