Targets
Gravity Before Boil: 1.048 SG (12.2 Brix)


Volume Before Boil: 6.08 US gals
Volume Transferred: 5.28 US gals
Volume At Pitching: 5.28 US gals

Total Water Required: 7.33 US gals
Original Gravity: 1.055 SG (13.9 Brix)
Final Gravity: 1.013 SG (7.8 Brix)

Volume After Boil: 5.28 US gals
Water Added To Dilute: 0.00 US gals
Volume Of Finished Beer: 5.02 US gals

Preparation
If using a yeast starter prepare one a couple of days in advance.

If necessary crush the grains.

Heat 2.52 US gals of water to 178 degF.

Mashing
Dough in the following fermentable ingredients.

9.50 lb of US 2-Row Malt
9.50 lb of "new batch" added to inventory 29 Dec 2010

0.50 lb of US Caramel 40L Malt
0.50 lb of "new batch" added to inventory 29 Dec 2010

0.50 lb of Flaked Wheat
0.50 lb of "new batch" added to inventory 29 Dec 2010

Mash pH should be 5.2.

Allow the temperature to stabilize at 154 degF. Allow to rest at this temperature for 60 minutes.

Add 1.78 US gals of water at 154 degF, mix and run off.

Add a further 3.04 US gals of water at 154 degF and mix.

Run off to collect a total of 6.08 US gals of wort.

Boiling
Bring the wort to the boil.

Add the following hops at the times given.

21 g of US Amarillo (60 Min From End)
21 g of "new batch" (alpha 5.0%) added to inventory 17 Dec 2010

21 g of US Simcoe (20 Min From End)
21 g of "new batch" (alpha 13.0%) added to inventory 17 Dec 2010

28 g of US Amarillo (5 Min From End)
28 g of "new batch" (alpha 5.0%) added to inventory 17 Dec 2010

28 g of US Simcoe (5 Min From End)
28 g of "new batch" (alpha 13.0%) added to inventory 17 Dec 2010

Boil the wort for a total of 60 minutes.

Chill the wort to the appropriate pitching temperature and rack the wort to your fermenter.
