Ok I have a wine kit .

Transferred to secondary 2 weeks ago
It says check it after 10 day to see if it below 998/996
And then add clarifying agents and potassium sorbate.
And let sit 10-14 days then bottle.

Any way my real question is I have to leave town for a couple months in 2 weeks and not sure if I will be able to bottle it in time.

So I am wondering if it will age better now in the secondary. Or to add the potassium sorbate and fining agents. And then let it age after it has cleared.
