Michael Jackson Tribute Brew, "Thriller"

As a tribute to Michael Jackson, I thought it would be fun to brew a beer in his honor, and a Wit-Porter hybrid seems appropriate. :fro:

Using "Forbidden Fruit" yeast in a beer meant to be enjoyed young is genius.

Haha, and it's the yeast used in Hoegaarden Wit, so it really is appropriate :cross:

How's about a blonde lite ale....infected.

I'm not a huge Michael Jackson supporter, I just thought it would be funny to brew a white black beer with Forbidden Fruit yeast.

Is there a way to make it lighten (and sour) as it ages? I mean toss some brett or lacto in there, but lowering the SRM will be difficult

that would be key to your success. Make it a Porter or Stout that lightens to an IPA or even a light Lager as it ages. It would also need a Nose or scent reduction from a being well rounded and smooth to a sharp pointed aroma.

Also serve it so cold that you would need one glove to hold it.

Neither did OJ.

I think the forbidden fruit yeast is hysterical. go for it. While it's at the beginning of it's career it might be great, but as it ages, it's probably get pretty weird

Something with little body, but with an explosive head when served young.
