I purchased an extract kit from Midwest Supplies which is their Boundary Waters Wheat which seems to be an American Wheat. I would like to possibly make it into a honey wheat so I was wondering how much honey malt to add? I purchased 1/4 lb. for steeping for 30 min @ 155F along with the 1/2 lb. Caravienne and 1/2 lb. Carapils that came with the kit. I want a hint of honey without it being too sweet. Do you think the 1/4lb is about right?

Here is the recipe:
1/4lb Honey Malt
1/2lb Caravienne
1/2lb Carapils
--These are steeped at 155F for 20-30min
6 lb. Wheat liquid malt extract
1oz Sterling hops @ 45 min
1oz Palisade aroma hops @ 2 min

Pitch using White Labs American Hefeweizen WLP320

I was going to use 1/2lb honey malt myself. They say steeping it doesn't bring out the honey flavor as much as mashing.

1/2 lb should be plenty. I've tried more but you don't get more honey flavor, just the same honey flavor and more cloying sweet.
