Keg/Bottling Temperature: 60.0 F Age for: 28.0 days
Storage Temperature: 52.0 F
Notes
came out with 4.5 gallons in primary with 1.064 SG. added 1/2 gallon water (boiled/cooled) and hydrometer adjust gives 1.056-58 adjustment. don't know choc affects SG...big prob with stuck sparge....
2 squares baker's chocolate tempered and boiled for 60minutes
added 2 oz lactose & 1 oz cocoa to secondary
BOTTLED 4 gallons with 1 oz lactose and .75 oz. malto-dextrine
The longer you can let this age- the smoother the outcome. I've had this bottled for 8 months- and it tastes great. My advice, if possible, is to let this bottle condition for ATLEAST 2-3 months. Sure, you can have a few after a few weeks, but try and keep 90% in stock. You'll enjoy it after a few weeks, but after 3 months you'll be amazwed that it is the same beer.
