I just made a kolsch with 80% Premium Pilsner Malt. The color seems to be a little darker than I would expect. The recipe called for German (2row) Pilsner Malt. Is there any difference between the two? Can't find much info on the web about it.
 
I never heard of the maltster Premium. In any case, what did you use for the other 20% of your grain bill?
 
Various pilsner malts do vary in color but the differences are very small. A 10% Munich addition is going to darken the color. It's your choice but a traditional Kolsch has no Munich malt and that alone would make it lighter in color.
 
Yeah, the Munich will darken it a bit, especially if it's Dark Munich. Try reducing the amount next time or use Vienna instead.
