picked up supplies for a blond ale the other day
this is my first batch without the use of dedicated instructions (im used to kits from brooklyn brew shop) Im doing a 5 gallon batch of

9.8 lbs American Two-row Pale
1.8 lbs wheat malt
0.8 lbs Weyermann Carahell

and

1 oz Mt. Hood pellets
1 oz hallertau pellets
Safale S-04 dry ale yeast

ya im excited but since im used to doing brooklyns kits im wondering

how much water to cook my grain in?
at what temp?
how long?

also the kits ive brewed in the past say to cook grains in x amount of water then heat another amount of water to pour over the grain should i use this method or just use 6 gallons of water to cook my grain in hopes that when i boil my wort it will reduce to my desired 5 gals?

also my homebrew store told me to cook my grain in my sparaging bag (suspended by a dowel across the top of the pot) instead of directly in the pot...
is this the desired way to go?
 
Unless that's some sort of slang term, I'm pretty sure that's illegal :p. Unless your in California.
