Hello.
I am planning on doing a Raspberry ale next weekend and I was hoping to get some advice on my recipe. I don't want to make a raspberry wheat, more of a smooth pale ale with raspberries. I'm looking for a little residual sweetness to balance out the tartness and I want the hops to be present and complementary to the fruit. Here's what I have so far, and keep in mind that this is for 3 gallons
6.5# Pale Malt (3L)
.5# Caramel (40L)
.25# Carapils
1.5-2# Raspberries added to secondary
1oz Cascade 5.5% 60 minutes
.5oz Pacifica 5.2% 15 minutes
WLP051 California Ale V
Mash at 154f for 60min
OG: 1.062
FG: 1.016
IBU: 30
SRM: 9
ABV: 6%
