Whilst I'm waiting for my bees to arrive I've bought some honey off a local beekeeper and set up another batch of honey beer.
I'm aiming for a pronounced honey flavour here so it makes up quit a large proportion of the fermentables and to retain some body I've mashed high and included crystal malt and black malt.
Maris otter - pale 1.4kg
Crystal Rye 140g
Black malt 30g
Honey 1kg added directly to fermenter after cooling
mashed at 69C
Bramling cross 30g 70min
Progress 10g 10min
Bramling cross 10g 10min
10 litres
OG 1070
Burton yeast
At eight days it's at 1025 and still bubbling away, good taste from the honey and backed up by the malt, seems well balanced at this point.
