its basically Charlie's Dry Stout Recipe as far as the specialty grains go, and I've added some more 2row to make it strong. Some extra fuggles too.
i've added the honey because last time i brewed this (without the lactose) the yeast stalled and it only got down to 1.020 after 5 weeks.
so questions-
1 is 1# Lactose too much? havent used it in a brew yet. found a sweet stout recipe in the forum here that uses 1#. but in that Designing Great Beers book, he says only use .3#
2 I have some more fuggles. does 8% ABV and 47 IBU sound good? or does it need a little more IBU since its higher ABV?
3 since the ABV is higher, should i add .5# of the specialty grains or is .3# enuff?
4 how bout some oats or flaked wheat for head retention? i'm going to keg this one, but some extra head is always a good thing (in beer and in life)

also i made a real big starter that has been on the stirplate since last night. 4 cups water 1 cup DME
