How important are Northern Brewer hops in a California Common? I have six pounds of hops in the freezer, none of which are NB. Will anything reasonably subsitute, like Chinook?
 
Well, you can use different hops, but of course you'll get a different result. Not bad, certainly, but different.

Northern brewer hops give Anchor Steam its characteristic hoppy spicy flavor. No other hop variety tastes like it.

If you use other hops, you'll get a different beer but it could be quite good just not an Anchor Steam clone.
 
Do yourself a favor and get the NB! This is a very good beer, all my bmc friends love it, it's just a smooth drinking good beer.
 
I'll use the NB. I suppose I should brew true to style the first time. I can always substitute next time.
