I have a lager (AHS Shiner Bock clone....yes, I know you don't like Shiner, no, I don't care because I grew up with it ) that has been going for a couple of months now.
Fermentation/conditioning schedule:
1. Primary starting at 68F degrees for 1 day then over a two day period reduce temperature to mid to low 50sF
2. Cold primary fermentation in fridge around mid 50sF for about a month
3. Over 3 days slowly raise temp to around 68F
4. Perform a 2 day diacetyl rest at 68F
5. Rack to secondary
6. Lager in the fridge at 40 degrees for 7 weeks
Question is - about 2 weeks ago, I decided I can't have this in the fridge anymore so I have it sitting at room temperature (constant 65-68 degrees). I'm wondering what effect this will have on the beer (a post lagering conditioning if you will).
