Another recipe idea, an American Ale
8 lb. American 2-row
4 oz. Belgian biscuit
8 oz. American crystal 20L
4 oz. Flaked rye
12 oz. American crystal 60L
1 oz. Cascade (6% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Cascade (aroma)
I'm thinking if I use liquid yeast,1056, dry yeast probably S-04 or US-05
5 gallon batch

Looks pretty darn good! You're looking at OG ~1.052, IBU 33, SRM 10. I like the potential flavor contributions from your grist, too. The only thing I think I'd change is the amount of Crystal malts - I'd not go more than a pound altogether.

Go with 1056 or US05 to ferment it. S04 will, IMO, be too fruity.

Thanks Bob. I wondered if I might get too much toasty flavor if I went with more 60 crystal, and too little color if I went with more 20 and less 60. I did play with the amounts of those 2 a bit.
I want a little citrus character, which is why I thought Cascade...my last brew with that was quite good. I'll take your yeast suggestion though because I don't want too much boost to the fruity side.

There's a difference between the citrus-fruit flavors from hops and the esters often called 'fruity' from yeast. It's good to know what to do to emphasize one over the other.

Cheers!

Bob
