Over a week ago I used the Safale K-97 yeast for my Hefeweizen. Has anyone used the Safale K-97 yeast, and what did you think of it. A good friend of mine that brews all grain recommended it in place of a liquid wheat yeast. I’ll get my liquid wheat yeast next month. The Safale K-97 yeast has been going just fine. Just curios about Safale K-97 yeas.

I didn't think it was that great used in a wheat.

From my extremely limited experience I would say it's more suited to German (and similar) ales than wheats. Didn't have any of the clove/banana one would associate with wheat yeasts when I used it.

Don't worry though, was still a tasty drop, just didn't have the characteristics I was hoping for.
