I bottled my honey double IPA not even a week ago. I cracked one open to check on it and see if it was carbonated. It was, but it had one problem. It was way too sweet! I used 2 lbs of honey for a 5 gallon batch. What I was told is that the honey would ferment out and produce a dry beer. That isn't the case. It is sweeter than any other beer I've ever had. Will it dry out in the bottles over time?

What was your OG and FG? If your beer didnt come down enough it will be sweet. It should taste better if it has some age on it. Less then a week is about 2+ weeks to early to be enjoying your beer.
