Anyone ever study the effects of krausen overflow during the first few days of fermentation my blow off tube goes into a gallon jug and my jug has about a solid inch or slightly more of sediment. Assuming this is mostly yeast does that mean my beer is now under pitched with yeast?

I doubt it's under pitched if you've got that much activity. As long as there's fermentables left the yeast will keep eating and multiplying.
