I wanted to brew the Best Bitter from Brewing Classic Styles recipe this weekend and while I have the recipe written down (mostly), I will be doing a three gallon boil. Now in the book, they talk about adjusting the amount of extract to add for a 3 gallon boil by estimating the points per gallon from the steeping grains an then working out how to hit the right SG from the rest.

I don't have a clue how to do this :( should I just go ahead and do a straight late extract addition or does anyone know the formula?

This is what I came up with, using the example in the book. I used the figures from the recipe you are using called "I'm Not Bitter, I'm Thirsty"

1. Estimate Yield from Steeping Grain:

1.25 lbs (specialty grains 70% efficient) x 24ppg / 3 Gallon = 10

Subtract that result from the pre-boil target gravity which is listed as 1.040

That gives you 1.030 or 30

2. The formula is then 30 x3/36 = 2.5lbs of LME

The proof is with the gravity formula:

30 = 2.5lbs x 36ppg / 3 gallons

So you need 2.5lbs for a three gallon boil with no hop changes.

Hope that helps.
