1st AllGrain SMaSH.....Pale Ale suggestions?

I've decided that I want to do a SMaSH this weekend and I am looking for some recommendations for a Pale Ale. Ive searched old threads and havent quite found anything that sounds completely appealing to me, although I have a few in mind if absolutely necessary. Anyone have any suggestions?
 
Vienna / Centennial?

Marris Otter / Northern Brewer

American Pale / Cascade


There are limit-less possibilities, what type of pale ales do you like?
 
I like centennial and cascade hops, actually ANY hops are fine, i guess I was just looking more for what quantities to use
 
I had some of my Simcoe SMaSH last night, it's been in storage for a while, but it's still really good! I Used Muntons grain & Muntons extract, before I almost completely all grain. (only use a few pounds of extract for High OG beers where my mash tun is too small.)

1.5 oz Simcoe (whole leaf)
.5 oz Simcoe - 60 min
.25 oz Simcoe - 30 min
.25 oz Simcoe - 15 min

.5 Simcoe DH - 1 week

This came out to be a very light beer, great for lawn mowing and attending summer bbqs and parties. 1.5 ounces was plenty in a low gravity beer like this, but still balanced with some malt.
 
Or if you really want to taste the hops, like an APA, then you could do:

Use a neutral bittering hop (Warrior, Magnum) or the same hop @ 60 min
1 oz - 15 min
0.5 - 5 min
0.5 - 0 min

That works with a 1.050ish beer.
 
A SMaSH using Marris Otter and East Kent Goldings has become my "house ale."

12 lbs MO mashed @ 152* for 60 min.
1 oz. EKG @ 60, 20, 5, DH
Wyeast 1028/WLP 013

30 IBU
5.6% ABV
6.8 SRM
 
I've really been enjoying the marris otter sorachi ace smash lately. It's gotten good reviews from the friends and fam.
