Any sort of downside of having a corny keg filled and cold and then taken out of the fridge to later be tapped?
 
Do you mean condition cold and then just carbonate and serve when needed? That will work as well as carbonating and storing at cool room temp.
 
hopsalot - I do it all the time, I primary/secondary, throw in kegerator to cold crash, rack to keg, carb for around a week, then rotate it out to fully condition. Got a mead, cider out now and just rotated back in an imperial stout.
Never noticed any problems with it.
