What is the ranco thermostat I need? the one stage or two stage? I am only looking to cool not heat. This is for a chest freezer for my kegs.

Single stage can either cool OR heat, just not at the same time - you choose. This is what I use - cool in the summer, warm in the winter.
Dual stage will automatically switch between both, so you could use one contoller without having to "tell it" what job it is doing.
