Hi,

I started a brew from a Cooper's kit (canadian blonde) and I want to know what would be a good gravity for bottling. SG was at 1.040.

First off, was 1.040 your OG, or the gravity it is currently? Second, finishing gravity depends on a lot of factors, most significantly your yeast. Without know what yeast you used and what your recipe was it is very difficult to answer your question.

Post your full recipe and we'll be able to help a bit more.
 
It should end up around 1.010. Depending on the yeast, it could be 10.14-1.008

If you are bottling from the fermenter, at least three days without a change in the gravity AND at least a week from the start of fermentation.
