On a whim I picked up a six of Mad Hatter IPA from New Holland Brewing earlier this week. It was an impulse buy. I didn't have great expectations.

Folks, this is a mighty tasty IPA. The floral notes are exactly where I like them. My only beef with this IPA is that I prefer my IPA's to have a touch more kick in them. None-the-less, this is a worthy beer.

Now my big question:
This beer clearly gets it's floral aroma from the dry hop used. Does anyone have any idea which hop they used? I initially thought Columbus, but after a few more tastes.....not so much anymore. It has an almost sweet cheese like character to it. Ok, that might sound nasty, but I assure you it isn't.

What say the community? Thoughts? Guesses? Speculations?
