Recently I brewed up a Lagunitas Censored clone based off of the recipe in the CYBI show. The yeast used is Wyeast1968/WLP002.
The grist was :
73.5% - american 2-row
10.8% - munich10L
8.7% - white wheat
6.5% - c60
0.5% - roasted barley
Mash schedule was 156F for 60 minutes with 1.25qt/lb water
Fermented about two weeks @ 66F then brought to 70F for one week to finish/clean up.
I missed the projected OG of 1.068 by two points coming in with 1.066 instead, not that big of a deal.
Lagunitas's Censored finishes at 1.017 for an AA of 75% which is already out of the projected range given by Wyeast for the 1968.
Soooo, when I went to check the FG while kegging I was quite surprised to find that it had dropped to 1.014 for a whopping almost 79% AA.
Of course I washed a few pints worth of it for later experimentation.
The hydro sample tasted really nice so I have high hopes for the clone. :rockin:Unfortunately/Fortunately, it is destined for a crazy drug fueled hippy bacchanal:fro:where it will be consumed within 3 days so I won't be able to try it over time and see it evolve; but I do plan on getting a sixer of Lagunitas' version to bring with me and I hope to get a couple of the more discerning beer drinkers among us to give a fair judgment of the two.
Anyways, for those that have used this yeast; what have your experiences with it been in regards to attenuation and flavor?
