So Ill be brewing a Russian Imperial tomorrow and wanting to age it on oak. I'll be getting my second 5 gal barrel in this week so I'm needing to fill it with something.
What would be the absolute longest to age in this 5 Gal sorghum whiskey barrel.

Would it be better to just age in carboy and put in later, or will the oak last as i age in the carboy later.
I'm wanting to age for a couple months maybe, or as long as i can wait. Then Bottle some and then age the rest in 3 gal keg.
My First barrel is a rum with East coast yeast bugfarm 5 and a golden strong in it.

What I do Ryan is ferment for 3 weeks in primary of choice then transfer to the oak Barrel for 60 to 90 days depending on how much oak I want..
Then I keg or bottle from there. If your going to bottle condition you might want to think about adding a little yeast to the bottling bucket after the barrel aging.
Cheers
Jay
