Need Advice - Mango Smoothie and 3711 for Citra Mango Saison?

I'm planning on brewing a simple and stupid mango saison, and was hoping for some feedback. I'm most worried about what the effects of using a fairly low amount of a single malt (with a bit of flaked barley for head and body). I also want to end up with a very bright, fruity and refreshing beer that is very dry and not at all sweet and malty. All feedback is welcome.

Batch: 3.5-4 gallons

Grain:
4# Pilsner Malt
64oz Naked brand mighty mango (http://nakedjuice.com/our-products/juice/mighty-mango)
1# Turbinado sugar
5oz flaked barley

Hops:
1oz Citra
0.5oz Saaz

Yeast:
Wyeast French Saison (3711)
Considering buying a pack of EC-1118 either as insurance against stalled fermentation, or to really make things dry and bubbly. Probably completely unnecessary.

No need for backup yeast if using 3711. That will give you lemon and pepper, though. 3724 will give you additional tropical fruit but may stall.

Otherwise, the recipe looks like it should work.
