What are the best Kombucha references, online or text?

I've never brewed or even tasted kombucha before, but if all I need is a gallon jug and some cheese cloth I'll give it a try.

What do you guys recommend for some initial reading on the topic - I've found alot of voodoo/chiropracty/homeopathic/"Kombucha cured my cancer and regrew my amputated arm" kind of websites. I'm looking for facts, techniques, how to flavor it, that kind of thing.

Any recommendations?

I was really confused by all the people trying to ferment kombucha (like, who would want to drink fermented seaweed tea?) until I just looked it up on wikipedia and found this:

Japanese kombu 昆布 "a Laminaria kelp; sea tangle" is dried and powdered to produce a beverage called kombucha (literally "kelp tea"). The English kombucha fermented tea is pronounced similarly, and is confused with the Japanese kombucha seaweed tea.[3]
