Salami Baked Beans?

I wanted some slow cooked BBQ beans today, but I had nothing in the fridge or freezer that had the requisite pork fat...no bacon, no ham hocks, no soup bones...nada. But I did have some Canadian bacon, pepperoni, and salami. Why wouldn't it work - meat, fat, spices, salt...what else do you need?

2 lbs Anasazi beans (or other dry beans)
1 can stewed tomatoes (look for the spicy ones with jalepeno)
1 can tomato paste
1 C brown sugar
1/4 C molasses
1/4 C BBQ sauce (preferably smoky in flavor)
1/4 C sliced onion
A handful of chopped Canadian bacon, pepperoni, and salami
Some water

Mix everything but the water together in a slow cooker. Top up with water to cover the beans with roughly 3 times their volume in liquid. Stir well. Cook on low all day, or on high until they're done.

As I type this, the beans aren't quite done (still a touch chewy), but the aroma is fantastic, and the flavor of the sauce is outstanding. Give it a try!

Pair with: beer. Any beer.
