wife just got me a 42 quart polarware with a thermometer, false bottom, and ball valve for christmas.
here is my idea
1. take old stainless polarware 30 qt pot and add a weldless sight glass, thermometer, and ball valve from monster brew.com, heat this hlt with a warner 1300 watt electric burner.
2. new mash polarware pot will be heated with a second warner electric 1300 watt burner.
3. brew pot wort will be boiled using a turkey fryer propane burner i have been using for my extract brews.

whole setup will on a wooden three tier stand that i will be building. no pumps, using a gravity fed design.

any problems with this set up

What size batches are you planning? I am not sure 1300 W will be big enough for the HLT unless you are fine with smaller quantities or longer rise time.
I am using a 7.2kW spa element in my HLT and it still takes 45 min to bring 11 gallons to strike temp.

5 gallon batches, i didnt think my 42 quart mash tun would be big enough to do ten gallon batches

I heat 11 gal of strike water for a 5 gal batch, but my system is much different than yours. You are right though, 5 gal is about the max unless you are really creative. :D
