This beer is brewed in honor of the American Philological Society, a learned society of scholars of Greco-Roman antiquity housed at the University of Pennsylvania.
6.6 lbs. Northwestern Gold LME (6-10 L)
Specialty Grains:
8 oz. German/Weyermann CaraMunich I (30-45 L)
6 oz. German/Weyermann CaraFoam (1.5-2 L)
1.5 oz. Perle (8% AA, 60 min.)
.5 oz. Warrior (16% AA, 60 min.)
.5 oz. Cascade (6% AA, 15 min.)
.5 oz. Perle (8% AA, 15 min.)
1 oz. Cascade (aroma)
.5 oz. Cascade (dry-hopping)
Specialty grains are steeped in 2 gallons of water at 155 F for 30 mins. 3.3 lbs. of LME are added at start of boil. Remainder is added after 45 mins. (15 mins. before flameout).
