Can someone give me a quick run down on the different types of munich malts? When a store sells munich malt, is it munich 10L? Is it a stepping grain or mashing grain? What does it add to a beer? Obviously I'm new to this and any clarification would be great.

Munich is a high temperature kilned malt, meaning it is darker in color and has more malty flavor to it than regular base malt. You might be able to steep it for some flavor (never done that, though), but it really needs to be mashed to get sugars and flavor out of it.

Munich malt comes in different grades and is different by manufacturer. Here's a basic rundown: Munich Malt - Home Brewing Wiki.
