How do you know how fresh LME is?

Just curious. My LHBS keeps their LME in bulk under nitrogen to keep it fresh. I am brewing a beer now, new castle clone from AHS. How do I know how fresh their LME is, taste, smell???
 
Good question. I think you would see off colors or mold or clumpy.

Yeah if it was years old. I think LME shouldn't be older than a month to use. But how would you know if it's been on the shelf for months?
 
The LME I've got from them seemed fresh. I'd imagine they have a real quick turnover and go through alot... they are a big place
 
I'm not saying it's not fresh, just asking how'd you know.

Smell it. Brew with it. No ****ty cardboard flavors/odors? GtG. You're right though, it's a roll of the dice. That's why I don't buy LME at my local shop. It sits there too long.
