I have a hop-less old ale using mugwort, yarrow, sweet gale, and juniper berries that has been bubbling along for several months krausen just dropped a few weeks ago OG was high (don't have my notes handy but in the high 1.080s) it's fermented down to 1.021.

I'm adding the 9097 olde ale blend from wyeast tonight. Planning on letting this monster sit another 6 month or more to let the Brett do it's job. how low can I expect this to go from this true "secondary" fermentation?

any experience with wyeast 9097?

BTW. I forgot how much I HATE 6.5 gallon glass carboys~ (only experience volume loss from equipment with carboys, PIMA to clean PIMA to fill with fresh clean water, and heavy!. PIMA! PIMA! PIMA!... only thing they are good for are the long fermentations... I need a homebrew or 4!
