Today is brew day, I decided to try a Belgian quad. I like the St. Bernardo's abt 12 and want to get close to a replication. Got the extract kit from Williams brewing. Instead of a secondary I'm going to use a brandy barrel that will hopefully condition it to a great taste with some hints of apple. Wish me luck.
 
Good luck, but I'd worry about getting too much flavor from your barrel and masking the yeast character of the quad.
 
I put the Belgian quad in the barrel on Friday. The gravity of the beer was 1.023. The OG was 1.1. I think I'm going to keep it in the barrel for a couple weeks so that there is t too much of the brandy flavor in the beer.
