Tonight I am drinking a 7.5 month Schwarzbier and it has become very dry (WLP830 yeast). It is so smooth. It has become a very drinkable beer and does not give any hint of alcohol yet intoxicates quite well. This is a tribute to aging beer. It had way more flavor at 4 months but was less drinkable due to sweetness. I guess being that beer is a living thing that this one beer shows that every beer has it's best point to drink it at and if your beer is clean and has no bugs that at some time in it's life it will be the best it can be. Without aging beer is no more that sweet liquid with alcohol in it. So age your beer and do not drink it all until you can see what it can become.
 
Mmmm. I've been wanting to brew a Schwarzbier. Sounds pretty tasty, sir!
 
I just tapped a schwarz last night that we brewed at our brewery about 5 months ago. It was fabulous, and intoxicated very well also.
