My Wort Was Small (<2 gal.) will this lead to watery beer?

I'm afraid to say my Noobdom was so intense at the time of cooking, that I forgot to take a reading. My reading at the start of 2nd fermentation (10 days after cooking) was 1.o1o.
 
No...if you boiled all your extract in the water, then topped it off to 5 gallons then you did the right thing, your beer will be fine. It wont be watery. If you topped it off to 6 gallons and it was a 5 gallon recipe, then yes it would be a "thinner" beer.
 
Assuming it was a kit for 5 gallons and not like a Mr. Beer kit you should be fine.
