I have a Saison de Noel from Northern Brewer currently in Primary, and was curious about bottle priming.
Looking at Desired Volume of CO2 for similar Belgians, is should be around 2.9+.
I emailed NB, and they said:
2/3 cup = 5.3 ounces seemed like a lot to me, but, 8 ounces! Wow!
I was thinking I'd just use the 5 ounce priming sugar packet that came with the kit (worried about bottle bombs), but, was curious as to some other input.

I'd recommend either 2/3 cup of corn sugar for a moderate level of carbonation, or a full cup for a strong Belgian-style level of carbonation. For the latter you'll want to make sure your bottles are properly capped with a good seal.
