So I make cider in the fall, and I'm looking for a good local orchard that will provide juice made primarily from bittersweet or bittersharp apples. I've been going to Carlson Orchards (http://www.carlsonorchards.com/) who provides a good blend of juice from several orchards, but doesn't really focus on the varieties with good tannin content.

I've called, emailed, etc. a lot of orchards in the area (all of those I can find via Google, anyway) but haven't had any success in finding out whether they provide apple juice with any specific blend of the more bitter varieties.

You could try adding some grape tannin to the must before you ferment it. Also if you know of a crab apple tree the juice from that has a ton of tannin.
